From My Recipe Box to Yours: Sore Throat Remedy

It’s January again, a brand new year has arrived along with a brand new cold & flu season. Ordinarily, I would be quite annoyed with this arrival because getting sick is just plain inconvenient at a time when I’m trying to keep up with my resolutions (which is difficult enough during good health). However, I recently discovered a remedy that actually works at healing and/or preventing the development of a sore throat. It’s also super simple and consists of only four ingredients! Lemon, ginger root, honey, and hot water. As you probably already guessed, the taste is a little sour, but all you have to do is gargle with the mixture for 1-2 minutes. No drinking is required. Plus, the honey tones down the sour flavor.

If you have a sore throat already, I recommend gargling a mouthful of the liquid at least 5-6 times a day until the sore feeling subsides. If you are using the remedy for preventive measure, 1-2 times a day will be just fine. The recipe is below, I hope that those of you currently battling the cold/flu get well soon!

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients

  • 1 Thumb Ginger Root, sliced or grated
  • 1/2 Lemon
  • 1 T Raw Honey
  • 1/2 cup Warm Water

Instructions

  1. Begin by putting a 1/2 cup of water on the stove to boil. I prefer using my tea kettle. Once the water is heating up, begin preparing the rest of the ingredients.
  2. Peel and slice ginger root into thin pieces, place in a mug. Using one 1/2 of the lemon, squeeze as much juice as possible into the mug. Add the tablespoon of honey. The water should be warm enough by now.
  3. Measure out a 1/2 cup and pour water into the mug with the rest of the ingredients. Mix well and gargle the liquid for 1-2 minutes.
  4. If the liquid is too hot to gargle, let sit to cool or add an ice cube for a quicker cool down. There is no limit to how much you can gargle at one time so if you would like, gargle the entire mug. This is what I usually do so that the remedy doesn't go to waste.

Okay, so a bowl of fruit might be much healthier than a batch of cupcakes, but it’s Tuesday and a little sugar pick me up may be just what the doctor ordered. Plus, the recipe I am going to share with you all (courtesy of Ree Drummond from the Food Network) derives most of its flavor from natural fruit sources, lemons and blueberries to be exact.

What I love most about this recipe is that it provides directions on how to make both the batter and the frosting completely from scratch. Recipes made 100% from scratch increase your odds of keeping MSG and synthetic ingredients out of the foods you eat.

So, skip the store bought can of greasy frosting filled with hydrogenated oils and make your own instead. Here are just a few of the many health benefits of using lemon as a main flavor ingredient in cupcakes: vitamin C, vitamin B6, vitamin A, vitamin E, folate, niacin thiamin, riboflavin, pantothenic acid, copper, calcium, iron, magnesium, potassium, zinc, phosphorus, and protein (organicfacts.net). A cupcake that is both yummy and healthy…what more could one ask for?

Ingredients

  • Batter:
  • 1 1/2 sticks Unsalted Butter (let stand at room temp)
  • 3 Eggs (let stand at room temp)
  • 1 3/4 cups All-Purpose Flour
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/4 cups Granulated Sugar
  • 1/4 cup Milk
  • 3 T finely shredded lemon peel
  • 1 1/2 cups blueberries, coated w/ flour
  • Frosting:
  • 3-4 cups Powdered Sugar
  • 1 stick Unsalted Butter (let stand at room temp)
  • 1 stick Cream Cheese
  • 2 T fresh Lemon Juice
  • 2 T Lemon Zest
  • Decoration:
  • Lemon Peel
  • Blueberries
  • Sprig of Fresh Mint (here's a piece of advice: wait to the mint on top of the cupcakes until right before serving to avoid shriveling)

Instructions

  1. Preheat the oven to 350F.
  2. For the batter: Mix the butter and eggs. In a medium bowl, mix the flour, baking powder, baking soda, and salt together.
  3. Mix the granulated sugar, milk and lemon peel together.
  4. Combine the flour mixture with the wet mixture, stirring thoroughly.
  5. Place cupcake liners into a pan and fill each cup three-quarters full with batter. Drop the coated blueberries on top. Bake for 18-20 minutes.
  6. For the frosting: Combine the powdered sugar, butter, cream cheese, lemon juice and zest together until light and fluffy. Pipe onto the cupcakes and decorate with lemon peel, blueberries, and mint leaves.
  7. Cover with plastic wrap and store in the refrigerator.
